Baking with VSL's favourite venue recipes

No surprise that Bana Bread tops the list of the nation's most-searched recipe for at-home bakers.  This month VSL share how you can bring one of their favourite venue recipes home... 

When it comes to getting creative (and competitive!) the VSL team loves nothing more than 'baking from home'.  Our go-to recipe during lockdown comes from The Doyle Collection hotels who have shared their homemade Guinness Bread recipe.  

Their famous Guinness Bread has been influenced by the hotel's Irish roots, it has become a staple on their menus across their in-house restaurants.  This can be enjoyed in The Marylebone's 108 Brasserie and The Bloomsbury's Coral Room

The Doyle Collection consists of eight properties; three across London, one in Bristol, three in Ireland, and finally one in Washington D.C.

Their London based hotel's include; The Marylebone, The Bloomsbury and The Kensington.  Each property has it's own distinct personality and style influenced by its local neighbourhood.  We love the contemporary stylish interiors throughout each event space and bedroom.

The Guinness Bread recipe has been created by The Bloomsbury Executive Head Chef, Byron Moussouris, which we are delighted to share with you.   

Ingredients

  • Whole wheat flour: 310g
  • White flour: 410g
  • Rolled oats: 140g
  • Table salt: 1 tsp
  • Baking soda: 2 ½ tsp
  • Butter: 2 tbsp
  • Milk: 270g
  • Black treacle (or molasses): 70g
  • Guinness: 140ml

Instructions

  • Preheat oven to 180c.
  • Mix together the whole wheat flour, white flour, oats, salt and baking soda in a large bowl.
  • Use a pastry cutter to cut the butter into the flour until the mixture resembles small crumbs.
  • Add the milk, black treacle (or molasses) and Guinness, and mix until well combined.
  • Use cooking spray to coat 2 bread loaf pans, and pour the batter into the pans.
  • Sprinkle a little more oatmeal on top.
  • Bake at 180c for 45 minutes to an hour, until the centre is cooked through and a skewer inserted in the centre comes out clean.
